I'm worried that I'm raising too much of a brush stroke. It's hard not to do on the whipped cream areas because I think of them in a sculptural way.

Ice Cream and Whipped Cream
It's amazing how many different colors go into the "white" of the whipped and ice creams in the desserts; the vanilla color of the ice cream is well-served with Williamsburg's Brilliant Yellow Pale and a touch of white, while the whipped cream picks up color from the restaurant lighting. It might have ridges of blue or pink. And the shadow colors are tricky to evaluate, too.
